Shipley's Restaurant - A sense of Sydney's rich past is
never far away at the Holiday Inn Darling Harbour, especially
when you're dining in Shipley's. Shipley's is named after John
Shipley, who owned the coffee and spice mill located on the site
last century.
Chef Matthew Eastwell and his team serve fresh
and imaginative cuisine in the beautifully converted building
with its imposing cast iron columns and an authentic ironbark
ceiling. Shipley's offers pre-show meals to ensure the perfect
night out on the town. Open for breakfast daily (buffet or a la

JB's Bar & Grill was originally a
woolstore built more than a century ago by a local merchant,
John Bridge. JB's has local and imported beers on tap and
features wines from the famous Hunter Valley region, just north
of Sydney.

sizzling Stonegrill steaks and cooling ales. Open daily from
